This Switzerland’s oldest cheese, is a smooth, semi-hard cheese distinguished by large
walnut-sized “eyes”. Its mild, buttery to fruity and full flavor and its melting properties make it ideal for cheese fondue or any other dish that requires melted cheese, such as gratins, grilled sandwiches, pasta and egg dishes or served on a cheese platter with fruit and nuts paired with a full bodied red wine. Other Alpine cheeses with melting properties may be substituted for Emmenthal, such as Gruyere and Fontal. It can also be frozen for up to three months with minimal effect on flavor and texture. Allow the cheese to defrost overnight in the refrigerator before using it.
