Pecorino Romano’s peculiarity is the fact that it’s made from sheep milk giving it a saltier
and denser flavor. Similar to Parmigiano Reggiano, it’s a hard, aged, dry cheese good for
grating and cooking but it’s also perfect as a table cheese paired with full-bodied red
wines, cold cuts and honey. Substituted in any recipe calling for Parmigiano, Pecorino gives the end result a sharper flavor.
