Grana Padano
Grana Padano Very similar to Parmigiano Reggiano, but is the more buttery, toned down version, due to its shorter aging period. It's also (protected designations of origin) PDO status. It's wonderful in chunks, shaved over pastas, risotto, salads, and is good cooked or uncooked.
Guanciale
Been looking for this. Finally tried it and it had a very different flavour notes from bacon! Kind of peppery, salty and made a very interesting and delicious authentic carbonara. Hope it is available in thicker blocks too (so we can slice into our desired thickness) -Liarnie
